I've got Photoshop CS, and forgot how to create an new gradient. Could someone help me out?

Create the gradient with the colors you want and then in the options (where you choose a gradient) there should be a list one of which has a 'Save Gradient' :)

OK, how about one with 3 Colors though?

On your Tools menu... press down your Paint Bucket to open up the Gradient Tool. Click on the gradient itself (not the drop down menu next to it) to open up the Gradient editor.
Follow the image below to add another color for the gradient... (click where the arrow is to add another color stop).
