Could you give a lit of what you've watched so that any suggestions might be made without fear of recommending something you've already watched?

Ya know, it might be easier to google on the web of what's popular or whatever. Or go to anime sites and search what genres you're into.
We could give our takes on what we like, but it may not necessarily be what you're into. It's like asking what movies people like, too.
Try this site: http://myanimelist.net/topanime.php
and this for new stuff being watched: http://myanimelist.net/anime.php?popular
You can look at some of the anime on that list, and it'll have some recommendations based on that series/movie/ova, too.
If you want to look for anime by genre on that site, you can go to Advanced Search, and there'll be a bunch of checkboxes you can click on, for whatever genre you want to look for. Tehre's plenty of info right there.

If you like sci-fi that has to do with ESP powers, Phantom Memory Kurau, is a great series. Not too much action though, but has great drama if you're into story telling.
depending on your age elfen lied is great. its has violence and has nakedness so if your not a grown up dont watch it.

Elfen Lied is a pretty good series, but I'm pretty sure someone in the teens can watch this. It's not so bloody that you should be a 16 year old or something. It is gory, but only for the first few episodes. And yeah, it has nudity, but it's not that detailed in the nudity department. I'd say, real live movies, have far more mature content than this show. Now, if you're talking about reading the comic book version of it, then that's a different story. So much was cut out, in terms of mature content, in the anime.
Didn't mean to derail the thread. Sorry guys.

Hajime no Ippo, Gungrave, Deathnote. Bleach, ofc.
Tummy Overlord

Samurai X, FLCL, Gantz if you're not against a bit of ecchi though I prefer the manga version, Rurouni Kenshin as well (Continuation of Samurai X), Dragonball if you're into retro, Akira, anything Miyazaki has done(Kiki's Delivery Service for sure), Code Geass, and Neon Genesis Evangelion as perhaps my favorite series of all time. Not a huge fan of anime anymore but I got to work with a would-be mangaku and the dastardly fellow got me hooked again.

If you want something that will make you really creeped out, but wanting to solve a REALLY good mystery, then "Higurashi no naku koro ni" (aka "When they cry") is perfect for you! I give this warning, it seriously messes with your mind. It can get REALLY gory and psychotic! It's totally only for the Mature viewers!
If you want something that is the complete opposite, the kind of anime that has a really good love story to it "ToraDora". It's short, but the story and feeling in it is perfect, I HIGHLY recommend this anime to anybody that likes anime... period! Lol! I really don't know anybody that doesn't like this anime. So if you haven't seen it yet, then you really should!

I'm surprised no one brought up "Tengen Toppa Gurren Lagann", probably one of the best animes I have ever seen. Hajime no ippo comes strongly recommended if you're into boxing, Full Metal Alchemist brotherhood is a good one too, make sure to watch brotherhood, it's better than the original, the story goes a lot deeper.
