To start things off I would like to share a recipe for scrambled eggs. Haha. You'd be surprised at how many different recipes there are out there. Here are the ingredients:
eggs
salt
pepper
oil/butter
milk/cream (optional, adding this will make it fluffier though)
Heat the pan, medium-low heat. Add oil or butter. Crack the eggs in a bowl or in the pan and scramble. Wait until it's 2/3 of the way cooked then put on a plate (The eggs will finish cooking on your plate. Don't worry!). Add salt and pepper to taste.

pineapple salsa rice w/ steamed veg topping
finely chop pineapples, tomatoes, onion, garlic, jalapeno peppers, mix together with solantro, salt and pepper and a bit of parsley
cook up some rice, remove from heat
stir in the salsa to the rice and put back on the heat
cut up some mushrooms, green pepper, skinned cucumber and onions
add a bit of orange juice in the base of a bowl and place in the vegetables. cover and put in microwave until steam to satisfaction. (another way to do this is partially cook in frying pan and then put into microwave)

This is my lemon-herb crusted chicken...
1. Take some chicken breasts and wrap them in saran wrap.
2. Take a meat mallet and pound the chicken. Don't pound it too aggressively.
3. Unwrap the chicken from the saran wrap and lay all the chicken breasts on a glass baking dish.
4. Pour lemon juice over it until there's a layer of lemon juice approximately 1/8" thick on the bottom.
5. Wrap the top of the baking dish with saran wrap and place in the fridge for an hour.
While you're waiting for that hour, it's time to mix up the ingredients to crust the chicken.
Get the following:
1 1/2 cups plain dry panko (you can substitute for breadcrumbs, but the panko adds a heightened crunch.)
6 tablespoons chopped fresh basil
3 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh rosemary
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
Ok, so making this is really easy... put all of those ingredients into a pie pan and mix it all very thoroughly.
Now we need to make the bonding agent for the crusting to stick to the chicken.
Ingredients:
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
So take a sauce pan and pour the olive oil in there, put the stick of butter in there on medium heat until it all melts.
Now that the chicken has been in the fridge for an hour,
1. Pull out the baking dish and pour out any remaining lemon juice.
2. Take a few sheets of paper towels and lightly pad the chicken to slightly dry away all the lemon juice.
3. Then brush the melted butter on both sides of the chicken and then coat the chicken on both sides with the crusted ingredients. Do this for all the chicken breasts until you run out of chicken or crusting ingredients.
4. Place all of the chicken breasts in the baking dish again.
5. Preheat the oven to 450°.
6. Place the baking dish in the oven for approximately 20 minutes.
Take out, plate and serve with a few wedges of lemon.

Mmmmmmmm. I love rice. Never had pineapple rice. Sounds so good though. What kind of rice do you use Kebbo?

doesnt matter to much, last time i made it i used brown rice

Ingredients:
Can of Campbells Chicken Noddle Soup
Instant Mashed Potatos
Water
Butter
Salt and pepper for flavor
What you need:
Mircrowave
Bowl
1. Open the can and pour it into the bowl
2.Add the mashed potato mix
3.Add a bit of water
4.Microwave on high for 1-2 minutes
5.Add water if too thick if too thin add more mix
6.If step 5 is done heat back in microwave for 30 secs
7.If right take out
8.Add salt and pepper as needed
9.Add butter and mix well.
10.Enjoy
I stumbled across this on accident one day it seriously tastes like HOMEMADE chicken noddles and mashed potatos :0

buy a chicken breast...slice the chicken breast open...fill middle with philadelphia...close chicken breast...wrap chkecken breast in bacon or ham which ever you prefer...then put in oven for half hour...heaven!

Mmm.... Okay, I don't cook often, but I do get asked to cook my salsa chicken a lot! Please note : if you've seen the Pace salsa commericals, they pretty much explain this entire receipe. It's that easy.
Anyway. You'll need :
Boneless skinless chicken breasts
Salsa (store bought or home made works either way) If this is your first time making it, or you're not a spicy person, then make sure you get the weakest salsa you can. When you cook with salsa, it gets hottter
Skillet or non-stick pan, deep enough to hold a small pool of salsa
Cooking oil or butter just to keep the chicken from getting stuck to the pan
Tip : The salsa will absorb into the chicken better if you cut little slices into the chicken before putting the salsa in. Even if you don't, it still turns out amazing!
Okay, first put the pan on the stove-top. Turn on to medium or medium-high heat, depending on how impatient you are, then put a small amount of oil or a dab of butter and let it heat up. Once the pan has heated for a couple of minutes, put the chicken into the pan and cook until it is toasty brown on the outsides. Next, get the salsa and dump enough into the pan so that the chicken is about halfway out of the pool of salsa. Then let the salsa sit and boil until the salsa turns a little pastey. Put the chicken on plate with some salsa drenched over it, and ta-da!

Everyone has posted such yummy recipes! I'll have to post something when I get home tonight.
I bake more than I actually cook though. But the one thing that I have not been able to bake successfully is French macarons... OMFG. So many failed attempts on my part.

Mashed Yucca
ingredients:
-2 lbs yucca root
-1/2 cup grated mild cheese, cheddar works nicely
-1 teaspoon salt
-3 tablespoons sugar
-2 tablespoons butter, melted
-1 tablespoon all-purpose flour
-1 egg, beaten
Preparation:
1) It's very important that you wash the yucca thoroughly, getting all of the dirt off of the root as well as a bit of the brown layer that surrounds the root itself. Feel free to use a vegetable peeler to finish off the job, just be sure to not take too much of the root with the skin.
2) One pot filled up perhaps 1/3 of the way with cold water and some salt.
Cooking:
1) chop up the cleaned yucca root into about half inch slices along the width of the root, do your best to make sure they are of equal measure so that they all cook evenly.
2) add the yucca to the pot and begin to boil the yucca until the root starts to become soft and almost falling apart, this can take up to an hour.
3) after the yucca has been boiled to this point, add it to a bowl of adequate size and mash it until arriving at a decent consistency, at this point chill the yucca so that when you add the other ingredients they wont be cooked when you are still mixing
4) add eggs, sugar, salt and cheese to the chilled yucca and mix completely.
5) place the mashed yucca mixture into a glass or clay oven save container, shred some cheese ontop of the yucca and place in the oven at 350 until the cheese has melted and the yucca has gotten hot, this doesn't take too long between 5-15 minutes, don't cook it for too long otherwise it will dry the yucca out.
6) serve and enjoy.

It is incredibly hot where I am now and it's time for a childhood summer treat. It's awesome. We call it ice candy.
So you need evaporated milk, sugar, and a sweet fruit (I love melons or mangoes. You can also use a chocolate drink. Maybe strawberries would be good, too.). You also need little plastic baggies. Blend the fruits, milk, and sugar. Make it a little sweeter 'cause when you freeze them they get a little bland. They taste fantastic.
Don't forget to freeze them!

Bake-less Cookies, or Drop Cookies (or delicious heaven if you ask me lol)
2 cups sugar
1/2 cup milk
1/4 cup oleo
4 tbsp cocoa
Bring these to a boil, but for 1 minute only.
Remove from heat and add:
1 tsp vanilla
3 cups uncooked oatmeal
1/2 cup peanut butter
Stir good and drop quickly on wax paper and let dry.
Makes approx 3 dozen..:mvboogie:

I'm not a big fan of peppers, but I love this!
Stuffed Peppers:
3 Green Peppers
1lb Ground Beef
1 Onion chopped
Salt
Pepper
2 cups cooked rice
Diluted Ketchup (2cups Ketchup/1cup Water)
Brown ground beef and onion, and drain off grease.
Add rice, salt and pepper to taste and enough diluted ketchup to mix.
Cut green peppers in half and clean out seeds and ribs. Stuff with beef mixture and pour the rest of the diluted ketchup over the top.
Put in dish with a little water in the bottom. Cover and bake in 350` oven or in microwave till the peppers are done (soft & tender)

Chunky Grilled Guacamole
Cooking Method: Broil-Grill
Prep Time: 20
Cooking Time: Up to 10 minutes
Makes: 24 servings (2 tablespoons each)
PAM® for Grilling Spray
4 ripe avocados, sliced in half, seed removed
1 can (10 ounces) Ro*Tel® Diced Tomatoes & Green Chilies, drained
5 green onions, chopped
1/4 cup chopped fresh cilantro
1/2 teaspoon garlic salt
1/4 teaspoon ground cumin
corn tortilla chips
1. Spray grate of outdoor grill and utensils with PAM for Grilling Spray. Preheat grill to medium heat.
2. Grill avocados, cut side down, 5 minutes or until browned. Cool; remove from skin and coarsely chop.
3. Combine chopped avocado with tomatoes, green onion, cilantro, garlic salt and cumin in small bowl. Refrigerate 1 hour before serving. Serve with tortilla chips, if desired.
Eggplant Parmesan
1 cup Italian-seasoned bread crumbs
1/2 cup egg substitute
1 medium eggplant, sliced into 6 (1/2-inch) rounds
1 tablespoon olive oil
1 small yellow onion, sliced
3 cloves garlic, crushed and then minced
1 teaspoon crushed red chili flakes
2 (15-ounce) cans crushed tomatoes
1 tablespoon tomato paste
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped fresh basil leaves
1 cup shredded part-skim mozzarella
1/2 cup grated Parmesan
Preheat oven to 350 degrees F.
Place bread crumbs on a shallow plate. Pour egg substitute onto another shallow plate. Place a wire rack on top of a cookie sheet. Take a round of eggplant, dip it into the egg substitute until fully covered, and then drag through the bread crumbs until completely coated; transfer to a wire rack. Repeat for each round of eggplant and then bake in oven for 15 minutes.
While eggplant is baking, heat olive oil in a 5-quart nonstick saucepan over medium-high heat. Add onion and garlic and saute until soft, about 1 1/2 minutes. Add the chili flakes and stir to incorporate. Add the crushed tomatoes and tomato paste and stir to blend completely. Bring to a simmer and simmer for 5 minutes. Season with salt and pepper, stir in the basil, and remove from heat.
Remove eggplant from oven and leave oven at 350 degrees F. Line the bottom of a medium-sized casserole dish (about 13 by 11 inches) with the eggplant rounds. Pour the tomato sauce over the eggplant. Top with the cheeses. Bake for 30 minutes until cheese is soft and bubbly. Remove from oven and let stand for 5 minutes before serving.

Mmmmmmm. I just cooked up an amazing dinner for myself. Here are the ingredients:
chicken fillets (little bit size pieces please)
onion (finely chopped)
garlic (finely chopped)
sesame oil
cilantro (chopped)
chicken broth
Let the onion, garlic, and chicken brown in sesame oil. Season with black pepper and salt. Pour in the chicken broth and let it simmer for a bit. Toss in the cilantro and leave it on the heat for a bit. It'll be a little bit green so it looks icky but I promise that it tastes fantastic! Serve over white rice or enjoy as is. Perfect chicken soup. :D Maybe add some ginger if you want. :D

Crispy River Spinach (Kang Kong)
river spinach (leaves only)
soda water
flour
corn starch
salt
oil
Prepare a mixture of half flour and half corn starch. Add soda water. Whisk until it no longer has lumps. Heat oil for frying. Dip river spinach into the flour and corn starch mixture then fry until golden brown. Sprinkle on the salt. They taste absolutely fantastic. It tastes a lot like tempura batter/potato chips. You could use other greens too but I dunno how that would taste. Happy eating!
