I played Syphon Filter{original}, MK: Trilogy, Doom, Raiden Project and a lot more than I can think of hehe
Well since PS3 will play both PS2 and PS1 games, they inherently all become part of PS3's library....so eventually this could just be PS3 games ;) But...since it isn't out yet.... hehe.

Never had a PS1, but have played Harvest Moon for it and that game is good.
Haha i'm playin through Star Ocean: The Second Story and, FF7 right now :P
